Class Menus
All cooking classes are hands-on, informative and interactive. Each three-hour class is followed by a sit down meal. Menus are based on food seasonality. Custom classes and gift certificates are available. Feel free to bring your own wine or beer. I look forward to cooking with you!
Homemade Pasta
Tapas
Real pasta is one of the most luscious things you can eat. We'll learn to make pasta the old-fashioned way--by hand, with love--and we'll practice both filled pasta and cut noodles. You'll be able to produce incomparably silky lasagnas, tortellini and fettuccine by the end of the class.
Tapas have evolved through Spanish history by incorporating ingredients and influences from many different cultures and countries. They can range from a chunk of tuna to a piping hot meat with sauce. We will explore, cook and enjoy many of the most popular Tapas dishes.
What's The Beef?
Ever get confused about the many cuts of beef and various names? You will learn the different cuts of beef and the best cooking methods to obtain the best flavor and tenderness. We will cook different cuts of beef along with classic easy side dishes for a quick weeknight dinner or to dazzle your guests at your next dinner party.
Chocolate Workshop
What are all those numbers on chocolate packaging about? Is there really any difference between a Hershey bar and those expensive imported chocolates in gourmet markets? How do you work with chocolate in a recipe? We'll taste over a dozen different chocolates and talk about their composition, tempering and then have fun making truffles, fondue and more.
American Diner Classics
A shout out to simple American cooking, Diners are known for a handful of classic, homey dishes like corned beef hash, home fries, biscuits and gravy, and egg creams. We will prepare some of the favorite Diner specialties that you can make at home.

An introduction to Chinese Dim Sum, you will understand the different types of Dim Sum and then learn to make and enjoy the most populat Dim Sum dishes. These include various types of steamed buns, rice noodle rolls, and dumplings all of which will include a range of fillings and ingredients from pork to prawns and chicken to vegetables.
Get a taste of Paris without the expense of a plane ticket! We'll make a classic bordelaise sauce and learn to work with green vegetables in the French style. And make potatoes as a rich, creamy gratin. Finally, you'll learn how to make pate a chou--the base for éclairs, gougeres and the ice-cream-filled cream puffs we'll make for dessert.
Why pay top dollar for sushi when you can make fresh sushi at home? With a bit of practice you will be making several types of sushi. You will learn about the types of fish used,and the types of sushi. You will learn how to make sushi rice, and dashi, the base for Miso soup and many Japanese dishes.
Elegant Finger Foods
These elegant hors d'oeuvres are beautigul and impressive. They are sophisticated takes on some of our favorite finger foods. Yet they are simple enough so you will have plenty of time to spend with your guests. Beet Tartare,Pecan Cheese Wafers, Smoked Salmon with Fromage Blanc, Chives and Pickeled Celery. And many more!
Breakfast For Dinner
We will take breakfast favorites and time-shift them to the dinner hour by dressing them up. For example, take your basic egg sandwich and add sweet carmalized onions, peppery arugula, and smoky bacon, still striking breakfast notes. One of my fav's? Pulled Pork Eggs Benedict...nom, nom.
